Easy to make Taco Lentil Soup for Your Quick Weight Loss Diet Plan || Dunnebells

This taco lentil soup is exactly what you need to have for dinner dinner during your quick weight loss diet plan. Whether you love meat or you would prefer to keep this vegetarian, this heartwarming soup is going to be your new favourite.

Loaded with protein (about 16 grams per serving) and containing ingredients such as beans, lentils, chilli powder and tons of flavour this easy to make soup will fill you up and keep you going.

Oh and if you manage to have some leftovers, get ready to scarf down a bowl of plain magic!

TACO LENTIL SOUP

  • 1 tbsp olive oil

  • 1 cup diced onion

  • 1 whole bell pepper, diced

  • 3 carrots, peeled and finely diced

  • 2 garlic cloves, minced

  • 1 28 oz can of crushed tomatoes unseasoned

  • 1 15 oz can of black beans, rinsed

  • 2 scoops of Vital Proteins broth or 4 cups of vegetable broth if vegetarian/vegan

  • 1 cup brown lentils

  • 2 tbsp cumin powder

  • 1 tbsp chilli powder

  • 1/4 tsp cayenne pepper

  • Optional: Salt to taste

METHOD

  1. Start with a large soup pot and heat the oil. Add the onions, carrots and garlic for 5-7 minutes (or until soft).

  2. Add all of the other ingredients and bring the pot to a boil. Once boiling, reduce the heat and cover the pot. Simmer for 50 minutes.

Optional: Garnish with sliced avocado.

Taco lentil soup notes:

  1. Want to make this in the slow cooker? Set it and forget it by placing all ingredients in and cooking on high for 3 hours or low for 5 hours.

  2. Will keep well in the freezer.
