The best black bean brownies you've ever had || Dunnebells

The BEST Black Bean Brownies you’ve ever had. Nobody will ever guess they are packed full of fibre (beans)!

Had a craving for brownies after watching someone on Scandal sit on the couch eating a tray full so decided to take care of that craving!

There is no reason you cannot have dessert every day, especially when it is good for you! It is no secret now that these Black Bean Brownies are my new best friend. 

GLUTEN-FREE BROWNIES

Gluten-free brownies that are perfectly chewy and fudgy all at the same time. No cakey brownies here! These are perfect for those intense chocolate cravings!

I mean really, if you follow my stories on Instagram then you know how often I eat sweets like donuts, cake or these tasty pancakes. Whenever I can add more nutrients (like protein or fibre) into my baking I do so to feel good about enjoying all of the treats! 

These are the only black bean brownies I have ever made that taste good directly out of the oven Still decided to let them cool a little so they were gooey on the middle and hard on the outside. But, if patience around brownies isn't your jam, dig in right away! 

BLACK BEAN BROWNIES: SUBSTITUTIONS

To be totally real with you I never make substitutions to recipes. I always follow them exactly as it’s written because USUALLY when I venture off it turns into a disaster. There are a few potential substitutions, but again, I recommend you try to follow the recipe!

  • Coconut oil. Melted butter or ghee can be used in place of coconut oil.

  • Coconut sugar. Any granulated sugar should work in place of the coconut sugar, however, I have not tried using any others.

  • Honey. Maple syrup can be used in place of honey if desired!

  • Chocolate chips. Cocao nibs could be an option here. One of my favourite variations of this recipe is using half chocolate chips, half peanut butter chips…YUM!

BLACK BEAN BROWNIE RECIPE

1 can black beans, drained and rinsed

1/4 cup honey

1/3 cup coconut oil melted (olive oil also works)

1 tsp vanilla

1/4 cup coconut sugar (or regular sugar)

1/4 cup cocoa powder

1/2 teaspoon baking powder

1/4 tsp salt

2 eggs

3/4 cup chocolate chips

METHOD

Preheat oven to 350 degrees F. Grease any loaf pan with coconut oil.

Put everything except the eggs into the Blendtec and blend until smooth.

Add eggs and blend until just combined.

Pour into greased pan.

Sprinkle extra chocolate chips on top if desired. 

Bake for 30 - 35 minutes until top cracks and skewer come out clean-ish.

ENJOY!

TIP: Store in an airtight container in the refrigerator. Reheat for 15 seconds in the microwave to restore the fresh-from-the-oven gooeyness.
