Make this chicken tomato zoodle Keto dinner in less than 20 minutes for dinner tonight!

Please enjoy this new favourite of ours - the paleo AND keto chicken zoodle (which are zucchini noodles) with tomatoes and chicken. This dish is a perfect addition to your weeknight dinners, ready in less than 20 minutes!

You all absolutely LOVE simple dinner recipes and while this one feels almost too simple to write down and share, I know after sharing it with a few 8-week program client and hearing their feedback that you are going to enjoy it too!

FAVOURITE DINNER RECIPES

This is one of my all-time favourite dinner recipes. Pasta is such a good comfort food but when you don’t have pasta in the house, you can make zoodles! The best part about zoodles is that you can enjoy a super duper large serving and still feel light, especially with this keto chicken zoodle recipe.

VEGETABLE SPIRALIZER

If you don’t have a vegetable spiralizer, then you can always just use your vegetable peeler to try and replicate the same consistency of the zoodles that you would get from a spiralizer.

If you like making healthy swaps when cooking, I recommend buying one. I purchased this spiralizer a few years ago and let it collect dust after using it once. Now that summer is coming, I am inspired again to be in the kitchen and using pasta alternatives.

KETO CHICKEN ZOODLES WITH TOMATOES & SPICED CASHEWS

INGREDIENTS

  • 1 yellow onion, diced

  • ½ tsp coconut butter

  • 4-5 chicken fillets diced into cubes

  • 1 garlic clove, minced

  • Two medium zucchinis washed well

  • 400 g crushed tomatoes

  • 7-10 cherry tomatoes (chop them in half)

  • 100 g raw cashews or fewer if following keto

  • For chicken seasoning: salt, pepper, dry oregano & basil

    Optional: Cashew seasoning paprika, turmeric, and salt.

METHOD

  1. Heat a large pan over high heat and add coconut butter with onion. Don’t burn them, cook for about 30 seconds.

  2. Add chicken and minced garlic to the pan. Sprinkle on the basil, oregano salt & pepper. Cook chicken for 5-6 minutes or until golden.

  3. While the chicken is cooking, you can spiralize the zucchini into zoodles. If you don’t have spiralizer, then just use your vegetable peeler and make ribbons out of zucchini.

  4. Add crushed tomatoes and let it simmer for 3-5 minutes.

  5. Roast the cashews in another pan until golden.

    Optional: Season with paprika, turmeric, and salt.

  6. Finally add spiralized zoodles, cherry tomatoes and then cook for another 1 minute then turn off the heat.

  7. Serve the chicken zoodles with spiced cashews and fresh basil.

  8. ENJOY!
