Guest post: Better Livin's Grandmas' chicken + veggie stew | Dunnebells

Hello everyone!

My name is Rachel and my blog Better Livin was born after spending far too many years chained to a desk, waiting for the weekend to arrive so I could go on an adventure!

As I write this, my fingers are crossed the worst of winter is behind us. While we like to think of March 1st as Spring, let's be real, it usually snows on through until April! I'm lucky to be one of the few who likes winter, especially the comfort food! My Grandma's chicken stew is a staple in our house and as someone who hates to cook, it's easy, quick, and cheap!"

So that is what I am sharing today. The delicious stew recipe, one I grew up eating.

To date, this is still one of my favourite meals. It is cheap, tasty and comforting during the winter. The only unfortunate part about this recipe is that my Grandma never measured anything so I will ask that you use her “by gosh and by golly” method and let your creative juices flow!

GRANDMA’S CHICKEN + VEGGIE STEW

INGREDIENTS:

Meat (I like to use roast chicken leftovers)

Veggie Stock

Carrots

Potatoes

Celery

Green Onion

Yellow Onion

Parsley

Lipton Noodle Soup Mix

METHOD:

Boil the potatoes and carrots in the veggie stock until tender (almost soft). Add in the rest of the ingredients.

and add the rest once those are almost soft.

This dish freezes well and really fills you up!

NOTE: My grandma always used veggie stock and soy sauce for flavour but I love the lipton noodle soup mix instead for flavour.
